The micellar casein covers upscale demands and is produced gently and naturally by means of cross-flow microfiltration (CFM). Casein belongs to the insoluble protein fraction of milk and does not pass into the whey, but is normally processed into cheese. Casein constitutes different types of protein.
A characteristic feature of casein is its long gastric dwelling time due to its gel-forming property and the concomitant slow flow of amino acids into the bloodstream.
